西安丽思卡尔顿酒店任命李东岳先生担任中餐行政总厨

西安丽思卡尔顿酒店于2023年8月21日正式任命李东岳(AlvinLi)先生担任景轩中餐厅行政总厨一职。Alvin来自美食饕客与大厨云集的粤菜发源地——广东,从小在粤菜饮食文化的熏陶下耳濡目染,对烹饪有着极大的热情和优异的天赋。
Alvin喜欢关注和阅读饮食文化、精致餐饮和艺术审美类相关书籍及资讯,从中获得菜品创意和摩登摆盘的诸多灵感。十七年粤菜生涯的不断探索与精进,以及粤菜、川菜两座美食名都的经验加持为他提供了丰富的阅历,也形成了鲜明的个人烹饪风格。坚持依时而食,恪守尊重食材的粤菜理念,注重创意的同时也极力保留菜品本身的风味,他创作出品的每一道菜都会带给食客难忘的味蕾体验。在加入西安丽思卡尔顿酒店之前,Alvin曾任天津四季酒店五度蝉联黑珍珠餐厅指南的津韵餐厅主厨,并于2023年荣获黑珍珠一钻餐厅奖项,也曾成功助力成都富力丽思卡尔顿酒店中餐厅摘得米其林2022年餐盘奖荣誉。
谈及对粤菜烹饪的热爱,他表示:“烹饪,以无穷之路演绎人生百味,每一条路通往不同的门,沿途有不同的风景,只有不断探索、尝试、发掘,勇于创新,优化传统,才能不断给食客新的惊喜,自成一派风格。”作为一名年轻新锐主厨,对于领导和管理团队则是秉承着坚持以身作则,高标准出品,日复一日感染团队一起进步。

21st August 2023,The Ritz-Carlton, Xi’an is delighted to announce the appointment of Mr. Li Dongyue (Alvin Li) as the Executive Chinese Chef forJing Xuan Chinese restaurant. Alvin comes from Guangdong, the birthplace of Cantonese cuisine. He has been deeplyinfluenced by Cantonese foodculture since childhood and has great passion and talent for cooking.
Alvin enjoys reading booksondifferent food culture, exquisite dinning and aesthetics, where he gains inspirations for creativity and modern presentations. His continuous exploration and refinement in Cantonese cuisine, plus working exposure in the two famous culinary cities of Cantonese and Sichuan cuisine, provided him with a rich experience and formed a distinct personal cooking style. Adhering to the Cantonese cuisine philosophy of respecting ingredients, emphasizing creativity while striving to preserve the flavor of the dish itself, he always creates a surprise for our diners. Prior to joining The Ritz- Carlton, Xi'an, Alvin served as the Executive Chinese Chef of Jin Yun Restaurant at Four Seasons Hotel Tianjin, which won the Black Pearl One Diamond Restaurant Award for five consecutive years. He also assisted the Chinese restaurant of The Ritz-Carlton, Chengdu win a Michelin Plate Award in 2022.
Speaking of his passion for Cantonese cuisine, he expressed “Cooking interprets the full flavor of life through endless exploring. Only by constantly discovering, trying, and daring to innovate, and optimizing traditions we can continuously surprise diners and create our own style.” As a young and modern chef, he sets examples and produces high standards for his leadership and strives to continuously improve his team’s skills.
With his appointment to JingXuan, we believe he will combine bothtraditional and contemporary skills to create his ownstyle, and assure tobring the unique Cantonese cuisine and fine dining experiences to diners allaround the world.
