毕厨擅长创意融合料理,在现代烹饪方式的基础上融入不同料理手法,结合本地特色食材,为食客呈现多层次美食体验。

  近日,成都棕榈泉费尔蒙酒店正式任命毕爽(Alan Bi)先生为尝艺中餐厅行政总厨,全面负责酒店中厨房的运营管理及菜品研发工作。

  毕厨来自辽宁,在世界奢华酒店及米其林餐厅拥有超过15年的丰富的烹饪经验及餐饮从业履历。凭借其对美食的热爱,2011年只身前往迪拜,在卓美亚阿联酋大厦HAKKASAN客家人餐厅开启了他的环球烹饪之旅,在各类奢华酒店和米其林餐厅间不断的交替历练,让他对创意融合料理有着独到的见解,他的菜品深受曼城老板曼苏尔酋长及迪拜王室的喜爱,曾两次受邀做私人厨师。在泰国工作期间,他应邀参加泰国电视台栏目《Iron Chef》铁人厨师并一举夺冠。2019年,毕厨加入加拿大DASHA餐厅,联手米其林一星主厨Akira Back共同打造现代创意料理。在加入成都棕榈泉费尔蒙之前,他曾任职于苏州尼依格罗酒店担任中餐行政总厨一职。

  Fairmont Chengdu is proud to announce the appointed of Mr. Alan Bi as the Executive Chef of Chang Yi Chinese Restaurant. With over 15 years worldwide culinary experience, Alan has worked in luxury hotels and Michelin restaurants in Dubai, Abu Dhabi, Istanbul, Bangkok, Johannesburg, Toronto, Shanghai and Suzhou before coming to Chengdu.

  In 2011. he began his journey at Hakkasan - Jumeirah Emirates Towers in Dubai, then worked for Hakkasan brand around the world. After that, he went to Atlantis The Palm for further study, where he has learned his skills in managing high-end luxury culinary operations in the hospitality industry. Alan’s skills were proven very successful and popular in the Dubai Imperial, he has been invited to be the private chef for the owner of Manchester City F.C.

  During his work in Thailand, he participated in the popular TV program “Iron Chef” and won the championship. In 2019. Alan joined Dasha restaurant in Canada, worked with Michelin one-star chef Akira Back while he improved to create modern fusion cuisine. Prior to Fairmont Chengdu, he was the Executive Chinese Chef of Niccolo Suzhou.

  Alan is a fusion cuisine expert who is very particular about food ingredients and combinations. He strives to bring guests innovative modern cuisine with a unique sensory experience, we believe his on-boarding will bring the new energy and excitement to Fairmont Chengdu.
